- Rellenos ganache de maracuyá:
En una cacerola al fuego colocamos la pulpa de maracuyá con el azúcar y la lechera hasta calentar sin llegar a hervir, una vez caliente agregamos la mezcla al chocolate blanco y mezclamos hasta disolver y alcanzar la temperatura deseada.

- Mermelada de maracuyá:
Colocar en una cacerola la pulpa de maracuyá, el azúcar y el mezcal y una vez caliente vamos incorporando el slurry de poco en poco hasta obtener la consistencia deseada.


- Método de siembra:
Dividimos el chocolate en 3 partes Derretimos 2 terceras partes del chocolate picado en intervalos de 10 segundos en el microondas hasta obtener los 50°C
- Una vez derretido el chocolate agregamos el resto del chocolate picado y mezclamos hasta incorporar hasta lograr alcanzar los 27°C para lograr un buen temperado.


- Rellenamos los moldes con el chocolate temperado y luego vaciamos para formar los cascos dejamos secar un poco y repetimos el proceso.



- Una vez formados los cascos rellenamos los bombones y cubrimos con el chocolate y dejamos enfriar para después desmoldar.



- Método en mesa de mármol.

- Derretimos nuestro chocolate a baño maría hasta alcanzar los 50°C.

- En nuestra mesa de trabajo vaciar una parte y con ayuda de un pala acodada y una raspa comenzamos a temperar hasta llegar a los 25°c esparciendo el chocolate y con ayuda darle vueltas sin hacer lías, tienen que sonar para lograr un buen temperado.

- Rectificamos temperatura y regresamos al chocolate que aún dejamos en el bolw hasta lograr la temperatura entre 27°C y 25°C para poder trabajar el chocolate.

- Rellenamos los cascos y vaciamos el chocolate y repetimos por dos veces.
Una vez que los cascos estén duros rellenamos y sellamos con el chocolate y después desmoldamos.
