- Primero debemos soplar el maíz 250 gramos, después lo colocaremos en una olla con agua y lo pondremos a cocer, una vez cocido el maíz se deja enfriar y después se lava con agua.


- Ya que tengamos nuestro nixtamal, lo llevaremos al molino y así obtendremos la masa.


- Tomaremos nuestros 250 gr de masa y lo colaremos en un recipiente con 3 litros de agua. Batiremos la masa con nuestras manos hasta que esta se disuelva.



- Después con un colador o un paño, colaremos nuestra agua de masa en otro recipiente, cómo se muestra en las fotos.



- Colocar nuestra masa de agua en una olla o perol.



- Una vez que esté en el fuego, debemos revolver hasta que hierve, si se deja de revolver se puede quemar.



- Colocaremos 4 rajitas de canela, previamente lavadas.



- También vamos a colocar 2/4 de panela y seguiremos revolviendo.



- Debemos probar el atole y si le falta más panela agregamos más y si no, así lo dejamos. En este caso agregaremos otro 1/4.



- Revolver hasta que los 3/4 de panela se disuelvan. Una vez que hierve dejar reposar por un momento y proseguimos a servir.
