  4. Teniendo nuestras claras montadas y nuestro caramelo listo.
    Agregaremos el caramelo al centro de nuestras claras y seguimos mezclando posteriormente agregamos la otra mitad de azúcar que se había reservado para secar nuestro merengue
  5. Cuando esté listo agregaremos nuestra mezcla de almendra por porciones y mezclamos envolventemente y en forma de 8
  6. Sabemos que ya está lista cuando la consistencia de nuestra mezcla parece lava volcánica, agregamos colorante la menos cantidad posible para evitar que se ponga más líquida y mezclamos lo menos posible
  7. Pasamos nuestra mezcla a una manga con duya lisa y haremos de forma circular nuestras formas encima de un molde o papel estrella, que no sean tan grandes por que expanden un poco, cuando ya tengamos todas en una charola golpeamos la charola varias veces y así sacaremos las burbujas de aire y las dejamos secar o reposar por 10 min

    Las metemos al horno por 15 o 20 min a 150° y evitamos moverlas para que no se bajen
  8. El último paso será agregar el relleno y listo
